You can make them out of what is known as Chocolate Plastic, a mixture of melted chocolate and corn syrup which is kneaded and left to cure for a bit. If I were you, I would get a beginning Wilton "how to" book and maybe even scan the baking shelves at the bookstore or library. I have made wedding cakes for years (I'm a Pastry Chef), and it isn't a beginner project. I would practice stacking cakes (if you are going to stack the wedding cake), and practice decorating so that you are familiar with all facets of making a wedding cake.

Well you can make roses out of buttercream or you can make roses or any other kind of flower out of gum paste or marzipan. Fondant would be harder to use because it wont hold its shape since it's moist. Gum paste and marzipan will hold the shape better.

Reply:Go to Michael's and get Wilton's cake decorating magazine. It's a monthly but they sell issues there. There are tons of recipes.
You can also make chocolate fondant, Wilton's chocolate or follow the advice of the other two posters. All the suggestions will work well.
Reply:use thick frosting with a flower tip on the bag and let it harden before cutting it like in a fridge
